
GINZA NISHIKAWA COFFEE ROASTERY
築地に構える銀座に志かわの店舗を改装し、新たにコーヒーロースタリーとして再構築したプロジェクト。
空間全体は、に志かわの食パンが持つクラストとクラムのテクスチャーの対比をモチーフに、質感と色彩の二面性をもって構成することで、既存のファンだけでなく新たにここを訪れた人にとってもブランドの核である「食パン」をどことなく感じられる空間を計画した。
カウンターには焼きムラの表情を活かしたタイルや、その背面には左官のような風合いのある赤銅色の塗装とし、焼きあがりのクラストのような深みとハードな印象を表現した。一方で客席側は、白を基調とし柔らかく光の伸びる壁面と有機的な形状のソファにより、軽やかでやわらかいクラムの質感を感じさせる構成とした。
コーヒー豆だけでなく銀座に志かわのブランドコンセプトである「水」や「素材」へのこだわりを、手仕事と素材の個性に重ね合わせることで上質な空間を目指した。
This project involved renovating Ginza Nishikawa’s Tsukiji store and reimagining it as a new coffee roastery.
The interior is organized around the contrast between the crust and crumb of Ginza Nishikawa’s shokupan. By translating their different textures and colors into the space, the design allows both long-time customers and first-time visitors to sense the bread at the heart of the brand.
The counter is clad in tiles whose irregular firing gives each piece a distinct expression, while the wall behind it is finished in a copper-red coating with the depth and texture of plaster. Together, they evoke the richly baked surface and firmness of a crust. In contrast, the seating area is composed in white, with softly illuminated walls and an organically shaped sofa that suggest the lightness and tenderness of the crumb.
The design extends the brand’s commitment not only to coffee beans, but also to water and carefully selected ingredients. By bringing that philosophy together with the individuality of materials and the traces of handcraft, the project seeks to create a space of quiet quality.
